Characteristic Cuisine and Genuine Flavours From the Past
Dishes characteristic of the Ladin culinary tradition such as dumplings, soups, and tortures are prepared according to simple yet genuine recipes. Tortures, for example, are pancakes—made with ricotta cheese, spinach, and cabbage—that were usually prepared by farmers on Saturday night as a reward for a hard week’s work in the fields and were served together with panicia, a delicious, creamy barley soup. In addition, wild berries such as raspberries and blueberries were widely used—especially in cakes and cookies. Of course, let’s not forget about apples: they are put to good use even today in strudel.
